Eat clean and green

As I have been practising getting back into a healthy routine after a fantastic break of two and a half weeks, I have been trying to be more innovative by what I cook for dinner. My brother eats clean and is extremely cautious of what he ingests in his body. He suggested I should try having kale as a warm salad. I was very eager to try this out as he took a picture of it when he made it and looked delicious.

Ingredients for the salad:

  • Half a tablespoon of butter (organic if possible)
  • Onions (optional)
  • A pack of mushrooms
  • A teaspoon of homemade chilli sauce (lots of ground fresh chillies, salt, fresh lemon juice, a teaspoon of vinegar. You can also add some cashew nuts)
  • An apple sliced into small pieces
  • A handful or two of spinach
  • A heaped tea spoon of garlic

Method:

Start off by adding the butter to a heated pan and then slowly add the rest of the ingredients whilst mixing everything well. The heat should be medium to high. Ensure to keep mixing so as not to burn the kale or spinach. Cook it for about 10 to 15 minutes.

Whilst the salad is cooking put the sweet potato in the microwave for about 6 to 10 minutes on high heat. When it’s done slice it in half and let it cool for a bit before you cans tart peeling the skin slowly. Once the skin is peeled cut it into small pieces and enjoy it with the warm salad.
